• The following 2019 Kaiken ‘Ultra’ Chardonnay was sourced from two sub appellations, Altamira in the Uco Valley with vineyards at 1200 meters a.s.l., with large diurnal temperature range. The soils are chalky with sand, lime and stones. The second sub appellation is Vistalba, Luján Cuyo at 1050 metres a.s.l., with large diurnal temperature range, low humidity and long daylight hours. Soils are alluvial derived from water erosion from the Andes Mountains that are loamy sand and deep with stones at one meter deep—making the soil highly permeable. The wine was sourced from 100% hand-picked chardonnay from clone 95 and clone 96. Grapes were hand sorted at the winery and pressed by pneumatic press. There was weekly bâtonnage—stirring of lees—in tanks and barrels then 65% of the wine was fermented in concrete and 35% in new oak barrel—at a controlled 16 °C with the latter 35% aged a further 12 months in oak barrel before being blended together and bottled for three months before being released.

It was also one of the first vineyards in the Douro Valley to practise organic viticulture. 2) Quinta do Cruzeiro has been supplying the firm with grapes since the 1870s and has contributed to the Fonseca Vintage Port blend since 1912. 3) Quinta Santo António shares Cruzerio’s long association with Fonseca and has contributed regularly to the Fonseca Vintage Port blend since early in the 20th century.
