Redstone hits a homerun with its first single-vineyard, vintage-dated sparkling wine. It’s great value and made of 80% pinot noir and 20% chardonnay crafted in the traditional method and left on its lees for 18 months. Pale lemon with blush hues, the fine-beaded bubbles wend their way to the top of the glass helping to release aromas of ripe pear, peach, rhubarb jam, a wisp of ginger and lemon blossom. A mouth-filling mousse of delicious fresh and crisp flavours—Bosc pear, pink grapefruit and freshly cut apple charms the palate along with breadcrumbs, chalky minerality and a repeat of ginger note in the tasty finish. This is fresh, full of life and delicious with simple sea salt chips or a delectable brunch match with eggs Benedict. (Louise Boutin)
